Keep one calendar as the only list of booked dates, and write every confirmed order into it straight away. Set a daily limit, and reply from the calendar, not from old chats.
- Pick a number of cakes per day that you can really make, and write it at the top of the calendar.
- Enter an order only after the deposit or the confirmation arrives.
- Answer 'that date is full, I can do the day after' to keep the customer.
- Ask for the date in the first message so you can check before you quote.
- Better still, let customers choose from open dates on a form.
