Bakery business plan template

A bakery plan has to show heavy equipment up front and bakers who start before dawn, so this template opens with both already priced. The example is a made-up US retail bakery with 12 seats that also sells bread to two cafes: a deck oven and proofer, mixers and a sheeter, display cases, a head baker, two bakers and two counter staff, and a forecast of 150 customers a day at a $10 average. Change the lines to your own quotes and the template shows the money still to find, the monthly profit and the customers a day you need to break even, then downloads it as a PDF.

Golden Crust Bakery
Marta Kowalski, owner and head baker
Millbrook
Summary
Golden Crust will be a neighborhood bakery making sourdough, pastries and celebration cakes on site, with a counter, 12 seats and wholesale bread for local cafes. We have found a former bakery unit with three-phase power. We are putting in our savings and ask for a loan for the ovens, the fit-out and the first three months.

How it works

  1. 1

    Read the example

A plan for a made-up business of this kind is filled in, so you can see what goes in each section. Start a blank plan when you're ready.

  2. 2

    Fill in your sections

Write about your idea, menu, site and customers. Add your staff, start-up costs and monthly costs; totals, profit and break-even add up as you type.

  3. 3

    Download the PDF

Check each page in the preview and download one tidy A4 PDF with a cover. Your plan stays saved in this browser to come back to.

What to get right in a bakery plan

  1. 1

Plan the labels before you sell wholesale

Bread and pastries you package for cafes or shops need ingredient and allergen labels. US law names nine major food allergens; sesame became the ninth on 1 January 2023, and many bakery products contain wheat, milk, eggs, tree nuts or sesame. Budget for a label printer and the time to write them.

  2. 2

    Write down what goes unsold

Unsold bread and pastries are part of your food cost. Track what is left each evening for two weeks of trial bakes, then put the real share into the food and drink cost in the forecast instead of the cost of the recipe alone.

  3. 3

    Give wholesale its own line

Wholesale bread sells at a lower price than over the counter but in steady, early-morning volume. Note in the menu section what you charge cafes, and check that the bakers' hours in the staffing table cover the extra bake before the shop opens.

Questions owners ask

Answered, plainly.

The ovens, mixers and the fit-out are usually the biggest costs. In the example, the start-up costs total $155,700 including three months of running money. Put your own quotes into the restaurant startup cost calculator to see your total and the money still to find.

Weigh every ingredient in one batch, cost it from your supplier prices and divide by the number of loaves or slices. The recipe cost calculator does this, and the cake price calculator builds a price list for cakes by size.

The sections are the same, but the costs are far smaller and what you may sell from home differs by state. The home bakery business plan template opens with a home kitchen, market stall and pre-orders instead of a shop.

Count customers at the counter a day and their average spend, then add wholesale orders and cakes. In the template, the forecast uses customers a day, average spend and days open; fold wholesale into the average or add it as a note in the menu section.
