Food truck business plan template

A food truck business plan has the same sections as a restaurant plan, but the money goes into the truck, the commissary and the permits instead of a dining room. This template opens with a made-up taco truck in US dollars: a built-out used truck, a generator and propane set-up, a vehicle wrap, a monthly commissary fee and event fees, with the forecast counted in orders a day rather than seats. Replace each line with your own quotes, and the plan works out what you still need to borrow, your monthly profit and the orders a day you need to break even, then downloads as a PDF.

Smoke & Salsa Taco Truck
Dani Ortiz, owner and cook
Eastfield
Summary
Smoke & Salsa will be a taco truck serving smoked-meat tacos and bowls at office parks at lunch, a brewery on weekend evenings and private events. We have priced a used truck already fitted with a kitchen and are putting in our own savings. This plan asks for a loan to cover the rest of the truck, the permits and the first three months.
Figures are the owner's own estimates, without sales tax.Page 1 of 5

The concept
Tacos and bowls built on brisket and pulled pork smoked the night before at our commissary, with three salsas made every morning. A short menu that one cook and one person at the window can serve in under three minutes an order. Customers can order ahead from our own page and pick up at the window.
Type of businessFood truck, lunch and weekend evenings, plus events
The menu
Six tacos, two bowls, chips and salsa, and canned drinks. Everything is prepared at the commissary, so the truck only reheats, assembles and serves.

How it works

  1. 1

    Read the example

A plan for a made-up business of this kind is filled in, so you can see what goes in each section. Start a blank plan when you're ready.

  2. 2

    Fill in your sections

Write about your idea, menu, site and customers. Add your staff, start-up costs and monthly costs; totals, profit and break-even add up as you type.

  3. 3

    Download the PDF

Check each page in the preview and download one tidy A4 PDF with a cover. Your plan stays saved in this browser to come back to.

What to get right in a food truck plan

  1. 1

Put the commissary in the plan before the truck

Many cities want a truck to work from an approved base kitchen. In New York City, a permitted truck must be cleaned, serviced and stored at a Health Department approved facility and return to it at least once each day. Find a commissary with space first, then price the truck.

  2. 2

Check how many permits your city issues

Some cities cap street vending permits. New York City limits them by law and runs waiting lists; from 1 July 2026 it offers 2,200 new supervisory licenses a year for five years. Write in the plan which permit you will hold and when, because a bank will ask.

  3. 3

Count the days you can really trade

A truck loses whole days to rain, breakdowns and cancelled events. In the example, 22 trading days a month at 85 orders makes the forecast; try 18 days in the plan and see whether the month still covers the loan repayment and the commissary.

Questions owners ask

Answered, plainly.

It depends mostly on the truck: a used, fitted truck costs far less than a new custom build. In the example, the start-up costs add up to $120,600 with three months of running money. Get quotes for the truck, the build-out, permits and insurance where you will trade, and the restaurant startup cost calculator adds them up.

Count orders, not seats. Estimate the orders you can serve in a lunch or evening service at each stop, multiply by your average order and by the days you trade in a month. The template does the sums, then shows the orders a day you need to break even.

In many US cities, yes. New York City, for example, requires carts and trucks to be stored at an approved commissary or depot when not in use and to return there at least once a day for cleaning. Ask your local health department what it requires before you sign for a truck.

Yes. Change the start-up lines to the cart or trailer, the hitch or tow vehicle and the generator you need, and set the orders a day you expect. Every heading and number in the template can be changed or removed.

Put a QR code on the window and the menu board that opens your own ordering page, so customers order and pay while they wait and collect when their name is called. See how a food truck can take online orders.
