Ghost kitchen business plan template

In a ghost kitchen plan, the biggest monthly cost after food is often the delivery apps' commission, so this template puts it in as its own line. The example is a made-up delivery-only wings brand in US dollars, renting a unit in a shared commissary: fryers and fridges, brand photos and packaging, two cooks and a packer, and a forecast of 60 orders a day at a $28 average with 80% of sales through the apps at 25%. Change the rent, commission and order numbers to your own, and the template works out the money still to find, your profit and the orders a day you need to break even, as a PDF.

How it works

  1. 1

    Read the example

A plan for a made-up business of this kind is filled in, so you can see what goes in each section. Start a blank plan when you're ready.

  2. 2

    Fill in your sections

Write about your idea, menu, site and customers. Add your staff, start-up costs and monthly costs; totals, profit and break-even add up as you type.

  3. 3

    Download the PDF

Check each page in the preview and download one tidy A4 PDF with a cover. Your plan stays saved in this browser to come back to.

What to get right in a ghost kitchen plan

  1. 1

Work out the commission line from your own mix

Multiply the sales you expect through the apps by the plan's rate. In the US, DoorDash charges 15%, 25% or 30% on delivery orders by plan and Uber Eats 20%, 25% or 30%. In the example, 80% of $50,400 a month at 25% is $10,080.

  2. 2

Plan how regulars will order direct

Every order that moves from an app to your own ordering page saves the commission and costs only the card fee. Put a QR code and a short note in every bag, and show in the plan what share of orders you expect to move direct by month six.

  3. 3

Check what the kitchen rent includes

Shared commissary units differ: some include utilities, cleaning, cold storage and a pickup counter, others charge for each. Ask for the full monthly cost in writing and compare it with your forecast before you sign a minimum term.

Questions owners ask

Answered, plainly.

Renting a unit in a shared commissary keeps the start-up costs low, since the hood and storage come with it. In the example, the start-up costs total $56,800 with three months of running money. Your own quotes go into the restaurant startup cost calculator.

It depends on the commission, the rent and the order volume. In the example, the commission is the largest cost after food. Change the share of orders through the apps in your own plan and watch the profit and break-even move.

The same sections as any restaurant plan, with no seats and more detail on delivery: which apps you will list on and at what rate, your own ordering page, packaging, the kitchen's terms and how far you deliver. The template has a section for each.

See the commission pages for DoorDash, Uber Eats and Grubhub, with each plan's rate and what it includes.
