Pizzeria business plan template

A pizzeria plan is mostly a delivery and takeout plan, so this template counts orders a day and puts the drivers and the delivery costs in from the start. The example is a made-up 30-seat US pizzeria: pizza ovens, a hood with fire suppression, a dough mixer and prep fridges, two pizza makers, two at the counter and three delivery drivers, plus a monthly line for delivery-app commission. Swap in your own quotes, wages and order counts, and the template shows the money still to find, your monthly profit and the orders a day you need to break even, as a PDF to download.

Corner Slice Pizzeria
Tony Russo, owner
Brookdale
Summary
Corner Slice will be a 30-seat pizzeria selling New York-style pies and slices for dine-in, pickup and delivery, open from 11 am to 11 pm. Most orders will be takeout and delivery, with our own drivers covering a two-mile radius. We are putting in our own savings and ask for a loan for the ovens, hood and fit-out.

The concept
Hand-stretched 18-inch pies and slices from dough fermented for 48 hours. Our own drivers deliver nearby, and customers order from our own page, with a lower price than on the delivery apps. The apps bring new customers from further away.
Type of businessPizzeria, 30 seats, dine-in, pickup and delivery
The menu
Eight pizzas in two sizes plus slices, wings, two salads, garlic knots and canned drinks. Lunch special: two slices and a drink.

How it works

  1. 1

    Read the example

A plan for a made-up business of this kind is filled in, so you can see what goes in each section. Start a blank plan when you're ready.

  2. 2

    Fill in your sections

Write about your idea, menu, site and customers. Add your staff, start-up costs and monthly costs; totals, profit and break-even add up as you type.

  3. 3

    Download the PDF

Check each page in the preview and download one tidy A4 PDF with a cover. Your plan stays saved in this browser to come back to.

What to get right in a pizzeria plan

  1. 1

    Cost your own drivers properly

Drivers who use their own cars cost more than their wage. The IRS business mileage rate is 76 cents a mile from 1 July to 31 December 2026; count the round trip of every delivery, and add the payroll taxes and the hired and non-owned auto insurance a bank will ask about.

  2. 2

Put app commission in the running costs

In the US, DoorDash charges 15%, 25% or 30% of each delivery order by plan, and Uber Eats 20%, 25% or 30%, or 15% if you deliver yourself. Estimate the sales you expect through the apps, multiply by the rate, and enter it as its own monthly line.

  3. 3

Plan the oven around Friday night

The deck or conveyor oven sets how many pies you can bake in your busiest hour. Work out the pizzas an hour your oven can bake, compare it with your Friday evening forecast, and buy for that peak rather than for a quiet Tuesday.

Questions owners ask

Answered, plainly.

The ovens and the hood with fire suppression are often the biggest lines after the fit-out. In the example, the start-up costs come to $158,500 including three months of running money. Add your own quotes in the restaurant startup cost calculator.

Count orders, not customers, since one order usually feeds several people. Estimate orders a day across dine-in, pickup and delivery, multiply by the average order and the days you open. The template then shows the orders a day you need to break even.

Many do both: own drivers for nearby orders, where the cost per delivery is lowest when drivers are busy, and the apps for reach. The own delivery cost calculator compares your own drivers with courier fees.

Weigh the dough ball, sauce, cheese and toppings for each size and cost them with the box. The food cost calculator for pizza restaurants opens with a pepperoni pizza already costed.
