To cost a pizza, add the dough for one ball, the sauce, the cheese, the toppings and the box, each at the share of the pack you use. The calculator below opens with a 12-inch pepperoni pizza in US dollars: flour, yeast, oil and salt for one dough ball, then sauce, mozzarella and pepperoni by the gram. Change each pack to what you pay, set your menu price, and it shows the cost of one pizza and its food cost %. Print the recipe card so every cook weighs the same amounts.

Cost is worked out from the pack price, so waste you note as usable % is counted. The selling price is before any tax.

Price this dish
The menu price calculator opens with this dish and its cost per portion already in. It gives you the price for dine-in, your own website and the delivery apps.
Set how many portions it makes and your menu price. UK visitors pick the VAT rate in that price, and the calculator takes VAT off.
Enter the pack you buy (2.5kg of potatoes for £1.75), how much the recipe uses, and the yield after trimming or peeling. Add a wastage allowance and packaging.
See the recipe cost, cost per portion, food cost %, GP and the menu price for your target. Then print the recipe card for the kitchen.
Make one card per size
Cheese and toppings grow with the area of the pizza, not its width. A 16-inch pizza has about 1.8 times the area of a 12-inch one, so it needs close to twice the cheese. Cost each size you sell as its own recipe and set its own price.
Weigh the cheese your cooks really use
In the example, mozzarella is the biggest single cost on the pizza. Weigh the cheese on five pizzas in a row during a busy shift and enter the average. A few grams over on every pizza adds up across a week of orders.
Put the box and the extras on the card
A takeaway or delivery pizza leaves in a box. Add it as one piece, and add any dip pots, chilli flake sachets or napkins you hand out free. Then the cost on the card is the cost of the order, not just the food.
