Your own agreement with Wolt sets your rate. These approximate ranges come from public sources, listed at the foot of the page.

Card processing
Wolt doesn't publish a card fee in Germany. Check your agreement.
VAT on the commission
Yes. Wolt's German partner FAQ says 19% VAT applies to all its services in Germany and is added in the payout calculation, which is why you may be charged more than the agreed commission. A VAT-registered business can usually deduct it.
Sign-up
No sign-up fee, and you can end the partnership at any time, according to Wolt's German partner page.
Missing or wrong items
If you forget an item or hand over the wrong order, Wolt can send a new courier for €4, or refund the customer and deduct the item's cost.

Every six days, every two weeks or monthly: you choose.
