Menu engineering matrix
The menu engineering matrix compares the dishes in one menu section by how many you sell and how much each leaves after food cost. Type each dish's price, food cost per portion and number sold, and it marks every dish a Star, Plowhorse, Puzzle or Dog, with the usual action for each.

Build your matrix
Open the menu engineering matrix. It is free, needs no sign-up and works on a phone.
Step 1: Pick the currency and the period
Under 1. Currency and period pick the Currency. Use one period for every dish, such as last month, and prices before sales tax.
Step 2: Add your dishes
Under 2. Your dishes type each dish's name, Price, Food cost for one portion and how many were Sold. Press Add a dish for more rows, the bin to remove one, Clear the list to start empty or Back to the example for the example menu.
Step 3: Read and save the result
Your menu matrix shows the Profit line (average margin), the Popularity line, the four boxes and a table with each dish's margin, mix, food cost and class, then what to do about each class. Press Copy the result or Download CSV.
